quite easy to answer this, i would go to a library to figure out what drugs i need to put myself in a coma, after that just wait to see if my beliefs in the afterlife were real. It is impossible to live alone, it would drive a man insane.

I'm an American so I would make a large pizza and then drive to the white house and eat the pizza sitting in the oval office while yelling "I'm the f*cking president now *itches!" Then assuming I truly was the last of mankind I would find an awesome way to commit suicide like flying air force one into Mount Rushmore.

I would run to the nearest military fort, ghost ride an Humvee and then drive shoot myself in the spine if I can so I don't have to feel the pain.
