- Spoiler:
. Starch is made of two polysaccharides of alpha glucose
. Amylose is a long unbranched chain which forms a coiled shape
. This shape is very compact making it good for storage
. Amaylose contains 1-4 glycosidic bonds
. Amylopectin is a long, branched chain
. Its branches make it good for storage as enzymes that break it down can reach the glycosidic bonds easily
. Amylopectin contains 1-4 and 1-6 glycosidic bonds
. Starch is insoluble in water. This means it can be stored in cells without causing water to enter by osmosis which would cause them to swell.
